The opening of Grace Road's Olive Tree Mexican Restaurant at Challenge Plaza in Laqere has created around 40 job opportunities while adding a new dining option for the growing community.

Retail Operation Manager, Grace Park says the decision to open the restaurant at this location was inspired by the growing demand for quality dining options, with True Mart Laqere serving as a central hub for the community.

Park says the restaurant is part of their long-term vision to become more than just a shopping destination, aiming to create a vibrant community space where people can shop, dine and spend quality time together.

She says that the jobs created include roles in kitchen operations and customer service, ranging from chefs and cooks to waitstaff.

She confirms that local workers and suppliers were prioritised during the hiring and setup process, emphasising the importance of supporting the local economy.

Park says introducing new dining options like this is very important for the community, highlighting that the restaurant follows a farm-to-table concept using fresh produce grown directly on Grace farm.


She says even their salsa is made from organic tomatoes grown on the farm, while taco tortillas are made from sweet potatoes, giving them a unique light purple colour.

She adds that the restaurant brings a new experience by combining Mexican flavours with locally grown Fijian ingredients, promoting healthy eating through fresh, seasonal produce.

Customers can expect a vibrant Mexican dining experience with fresh, flavourful dishes inspired by authentic cuisine, with a menu featuring traditional favourites with a unique twist.

Park says the dining experience is designed to be warm, relaxed and family-friendly, with a welcoming atmosphere and attentive service.

She adds that signature dishes include tacos, chicken fajitas and enchiladas, with the use of farm-fresh ingredients setting the restaurant apart.

Meanwhile, Park confirms there are plans for further expansion, including the opening of Grace Beauty next to the restaurant in two weeks, followed by a fitness centre a month later.

She says the official opening of Navua Fitness will take place next week, which will be the largest fitness centre in Fiji at approximately 4,000 square metres. 

Park adds that the facility will feature state-of-the-art gym equipment, indoor pickleball and badminton courts, outdoor tennis courts, full air-conditioning, modern shower facilities, and an in-house cafe offering options such as protein drinks.
